Correct format of rest/version output

Description

Update the output to follow the format all of the other applications are doing.

See below for example:

USAS = {"name":"USAS Application","version":"2024.19.0","orgName":"SAMPLEVILLE EXEMPTED VILLAGE","orgId":"012345"}
Workflows = {"name":"SSDT Workflows","version":"1.4.1"}
